Golden Baskets Recipe

Made this appetizer for the second time and realized we both enjoyed having it. It’s so simple to make and it look attractive in a way. Good having it when you having a party.
Ingredients:7oz package spring roll sheets, 5 x 5 inches, or filo pastry, thawed if frozen

Filling:
1 – 1½ tablespoons sunflower oil
2 garlic cloves, finely chopped
7oz ground chicken or shrimp
¼ cup carrots, finely diced
¼ cup corn kernels, thawed if frozen
¼ cup green peas, thawed if frozen
½ cup red bell pepper, seeded and finely diced
1 tablespoon light soy sauce
½ teaspoon ground white pepper
Pinch curry powder
1 green onion, finely chopped

Garnish:
30 cilantro leaves
2 long red chilies, stemmed, seeded, and finely sliced

Method:
1)      Make the filing. Heat oil in a nonstick wok or skillet and stir-fry garlic over medium heat until lightly browned. Add chicken or shrimp, crumbling and breaking up the meat until it has separated and cooked.
2)      Add the carrots, corn, peas, and red bell pepper and stir-fry for 1-2 minutes. Add the soy sauce, ground white pepper, curry powder, and green onion, combine well, and set aside.
3)      Cut the spring roll sheets or filo pastry into 60 squares, each 2½ x 2½ inches. Lay 2 squares in each indentation in a muffin pan used for making 1½ inch muffins, overlapping the squares so that the top sheet is at an angle of 45 degrees to the bottom one. Prepare 30 baskets and bake in a preheated over, 350F, for 10-12 minutes or until crispy and golden brown. Carefully remove baskets and let cool slightly.
4)      Spoon the filling into the baskets and serve at room temperature, garnished with a cilantro leaf and some chili slices.

Shu Uemura – Eyelash Curler


I recently purchased an eyelash curler from Shu Uemura. I read a lot of this curler and been the top selling for years. How can I not get it when the price is decent? It’s only $16.00! Not too bad ya?
You can google it and read the review from others. I’m just happy that I got it.

Layang Layang - Day # 4


On day four, we headed to Layang – Layang for a good satay. I’m excited in the same time not because I misses it so much but I been telling Calvin about how good it is. They have the BEST satay EVER and the chicken wings too. I’m non-stop telling Calvin about it from the first day I met him.
FINALLY! He gets to try it and tastes himself. Alas….. Indeed scrumptious! Once you had it, you asking for more in the future. I’m drooling right now as I’m typing this. Darn it! I’m typing with a wet keyboard. *j/k*.  Drooling is true, okay! I still think its funny how Calvin can eat so much and ordered pretty much too. It’s like….. Eat for a years. That’s the only time he did not complaint about being HOT.
I did not eat as much as I wanted. I’m just falling sick somehow. Having a throat ache which I assume I’m not used to the weather. Never been so uncomfortable before. I kept on telling myself to be strong as I don’t want to ruin my vacation. Hard but still manage to hang on there.

What I like about this place is that, you can do a lot of things. You can walk by the beach and watch the sunset or you can do this………..

Ha ha ha…. You can either watch the horse, ride it or disturbing just like me……OR if you a cam-whore person, you know what to do.
If this is not enough for you, don’t worry….. I’m bringing you to the surrender point which it just across the street. This place is a historical place where the Japanese surrender themselves to the Australian, if I’m right. Just Google it… I bet you find something about it.
Before I continue the photo marathon, let me explain to you as why I took a photo of the cat. This cat is very annoying. She had been following us ever since we walked in to the surrender point. Not sure what her purpose but we ain’t carrying any food. No matter what we do, she still stick to us like a glue till we figure out that we have to walk quicker as she can’t walk fast or run coz her tummy is about to explode

Mommy, I'm Sorry!


This entry is about the time where my little princess did something I never thought she will do it.
So a week after her surgery, Calvin and I kind enough to remove her cone so that she can have a break. And we can have a break too. It’s really stink coz she kept on drooling or sweat coz it was summer during that time. And it produces this sweat smell that I can’t bare with it. I just wanted to give her a bath during that time. That is how we took out her own during the day when we around.
Then one day, we found out she moved her stitches. First, I saw purple stitches on the carpet and I thought maybe it’s from the clothes we wearing but none of us have purple tread. And then, I flip my princess up and saw all her stitches what GONE! I’m so freaked out and thank God Calvin is around and quickly took an antibiotic and put it on her. Called the vet and asked us to drop her the next day since it was closing. Oh man….. Just don’t know how scare am I on that time.
Took her in and the vet assistant took a looked and saying it was okay and my princess did a great job from removing it. She don’t have to stitch it back since the flesh is already heal but still recommended to have her cone on coz she might lick it and will coz infection. Good news for me and I don’t have to pay any extra fee for that. And she doesn’t have to go back for removing stitches. I’m not sure if this good thing for me. Maybe that’s what she want it and she don’t have to go back to see the doctor.
Moral value: never leave your eye away from your kid when they need a special care. Not even a minute coz they know what to do when you’re not looking. They just too quick for everything!

New Year


Sorry this is so over due. Finally I get to sit down and update. I’m not so sure what I’m so busy this month but I guess it’s a good sign for me, don’t you think?
Anyways, New Year was good for me. Been busy every since the January 1st. On January 3rd, I accompany Calvin to bring his boss and co-workers from Taiwan for a site seeing. How can I miss that? I love going around. No San Francisco this time. This time we go South…. Yes! We went to Santa Cruz but not the broad walk. Somehow, I’m gone back to Mystery Spot AGAIN!!! I’m so not excited about it. It’s a nice place but in less than a year I’m going back to the same spot. I think, I’m expecting too much. I really wanted to go somewhere new. Pictures below are from Mystery Spot.

Next, we went to Monterey to have our lunch. Okay….. Calvin bought them to the same restaurant when we bought his mom the last time. Hmm………… It’s okay, it’s my 2nd time there and I can still accept it. Food is delicious as always. Just look at the photos below. It tells everything!

What else can we do beside cam-whoring right? Too bad… we did not go to the aquarium. I wanted to go so badly. The last time I went I was so pissed off. I don’t want to talk about it since it already over. Just some friend is born to be selfish.

Next, we at miles 17! YAY! Finally get to really enjoy it. As I said before, I did not enjoy the last time. At least, I get to redeem it this time. I get to stop every single check point to check out what so special about it. I love the place and a new nice place to take photos too. But I realized that I’m don’t look good in any of the photos lately. Guess, I lose a lot of weight. Oh Gosh……….. I need to stuff more food into my mouth even I’m hungry. Not sure if I’m stress or unhappy.

The Lone Cypress
We managed to saw a school of dolphins swimming around close to the rock. I’m acting like a child when I saw them coz I’m so excited that I get to see a wild dolphins. I just love them.

Steamed Shrimp (Zheng Xia) Recipe


This is one of our favorite. Calvin and I love this dish and we always order it at the restaurant. One day, I decided to try it at home. Well, having at home of course its way cheaper than in a restaurant. One good thing having it at home is that, you don’t have to worry about being messy. And you can lick your 10 fingers without worrying about the eyes on you in public.
Ingredients: 
1 1/4 lb (500g) uncooked jumbo shrimp
1/2 tsp salt
3 green onions (scallions), halved
8 thin slices ginger root
2 tbsp Chinese rice wine

Method:
Remove the feelers of the shrimp but keep the shells and heads on. Rinse thoroughly and drain. Pour water in a steamer and bring to the boil. Arrange one half of the green onions and 4 slices of ginger in a deep dish, arrange the shrimp over the top, and sprinkle with salt. Scatter the remaining green onions and sliced ginger over the shrimp. When the water has reached a rolling boil, stand the shrimp in the steamer, and steam on high for 10-15 minutes. Remove the shrimp out the steamer and drizzle with wine. Serve hot.

2009 Achievement


2009 is the most relaxing year yet fun for me. Since I got my dog, I did not travel as much as before. Guess, I haven’t really prepared of leaving her alone at home or the dog hotel. I always have these worries about if she going to be okay. I know, the first one always the hardest to let go but I will learn.
